The Spanish Butcher, a popular Galician seafood & steak restaurant from Glasgow, is expanding to Edinburgh's North Castle Street in May. Founders James & Louise Rusk will create 45 jobs, offering a Spanish & Mediterranean-inspired menu featuring specialty cuts of steak & seafood, including Galician Rubia Gallega beef & local Scottish produce. The restaurant is anticipated to open in two months.
