Gretchen created a healthier lasagna using zucchini as a low-calorie noodle substitute.

In an effort to reduce carb intake, Gretchen experimented with replacing lasagna noodles with low-calorie zucchini slices. She found zucchini's mild taste and nutritional benefits (fiber, folate, magnesium, vitamin C) made it an ideal substitute, and preparing the dish was simple. With panko-and-Parmesan coated zucchini strips, Gretchen successfully created a healthier version of the traditional Northern Italian dish.
