A Phoenix woman hospitalized with rare botulism from homemade fermented swordfish is recovering after life-saving treatment.
A 24-year-old Phoenix woman, Trinity Peterson-Mayes, a two-time childhood cancer survivor, was hospitalized with rare foodborne botulism after eating a small amount of fermented swordfish made by a friend.
She developed severe symptoms including difficulty swallowing and breathing, requiring a ventilator and treatment with a life-saving antitoxin flown in from another state.
Two other people who ate the same dish were also hospitalized but have since recovered.
Botulism, caused by toxins in improperly fermented foods, is extremely rare in the U.S., with about two dozen annual cases.
Peterson-Mayes is now in rehabilitation, facing a lengthy recovery, and a GoFundMe campaign has raised nearly $9,000 to help cover her medical costs.
The incident underscores the dangers of homemade fermented foods.
