Xiamen Airlines has launched a new in-flight dining experience called "A Starred Journey" with Hong Kong’s Michelin-starred chef David Lai, featuring a menu themed "Symphony No 6: Resonance."
The multicourse meal, inspired by musical structure, includes a prawn tart, Wagyu beef sandwich, bouillabaisse with wild-caught fish and saffron, and Lai’s signature chicken rice—first served on the airline’s flights.
The dishes were adapted for long-haul travel, reflecting a collaboration focused on maintaining quality and flavor at altitude.
