Sydney's Quay restaurant will close in February 2026 due to financial pressures despite renovations and a new lease.
Sydney’s Quay, a renowned Sydney restaurant since 1988, will close in February 2026 after nearly four decades due to ongoing challenges including low international tourism, rising costs, and shifting dining trends.
Despite a $4 million renovation and a new 20-year lease, the restaurant’s high operating expenses and labor intensity made its fine-dining model unsustainable.
Executive chef Peter Gilmore will maintain Quay’s current five-course menu and premium experience, including the return of the signature snow egg, while rejecting a nostalgic farewell menu.
Gilmore plans to focus on smaller, sustainable ventures, possibly in Hobart, and spend more time at Bennelong.
Co-owner Nikki ToFink will continue managing other venues.
The space’s lease will transfer to Australian Venue Co., which may rebrand it using a name inspired by historic ocean liners.
