Nigel Ayling has opened the South Coast Tap House in Merimbula, NSW, to challenge the idea that beer must be bitter, offering over 40 craft beers including pilsners, sours, dark ales, gluten-free, and non-alcoholic options.
The tap house serves as a hub for a 370-kilometer stretch of breweries from Wollongong to Pambula, highlighting the region’s locally grown hops, malt, and ingredients that enhance beer quality.
With tasting paddles and plans to expand to 50–60 beers, it aims to introduce visitors and locals to diverse flavors while supporting the South Coast’s growing craft beer scene.
