Sydney's new Watermans restaurant opens at Barangaroo, offering roasted chicken, seafood, and creative small plates.
Watermans, a new Sydney restaurant by the Bentley Restaurant Group, has opened at Barangaroo, featuring a creative menu centered on roasted chicken with a potato flake crust, seafood dishes like wood-fired scallops and pickled octopus, and reimagined taramasalata on pomegranate molasses buns.
Led by chefs Nick Hildebrandt and Brent Savage, the restaurant reflects a strategic shift toward fewer, larger venues, following closures of smaller locations and the sale of Yellow.
The group is focusing on full control and sustainability, with Watermans seating up to 150 guests and operating daily for lunch and dinner.
