Disuko, a new Japanese venue in Melbourne’s former Madame Brussels space, has reopened with an omakase counter, cocktail bar, rooftop terrace, and private dining.
Led by chef Hung Hoa Duong and Michael Stolley, it features playful dishes like a McDonald’s-inspired sando and wagyu katsu sando, plus a miso-y udon carbonara.
The 12-course omakase includes sake pairings, while the rooftop offers casual snacks and inventive drinks, including a whisky and jalapeno soda.
The retro-themed space, with disco balls and vinyl music, seats 150 and is open for dining and events.
