Edition Hospitality bought Melbourne’s Florentino restaurant group, keeping all staff and planning updates while honoring its Italian roots.
Edition Hospitality, led by CEO Rebecca Yazbek, has acquired Melbourne’s historic Florentino restaurant complex, including Florentino, Grossi Grill, Ombra, Arlechin, and Cellar Bar, in a deal finalized in September.
The new owners plan to rename Grossi Grill as Cafe Florentino, refresh its design by 2026, and introduce modern dining concepts like pizza and gelato at Ombra, while preserving the site’s Italian heritage.
All 80 staff from the previous Grossi group will be retained, and Edition aims to address past cultural concerns through new internal policies.
Culinary direction remains under review, with customer feedback guiding future changes.
The sale price was not disclosed, though estimates range from $800,000 to $4 million.
The Grossi family said the sale marks a new chapter, not an exit, as they look ahead.
