Researchers at the University of Adelaide have discovered that molecularly imprinted polymers (MIPs), developed in New Zealand, can effectively remove smoke taint from wine, a significant issue for vineyards affected by bushfires. By adding MIP beads to smoke-impacted wines, they successfully eliminated 35 to 57% of volatile phenols, improving quality. This technology is now being utilized commercially and may address other wine taints in the future.
